The delicious Cassava Cake

Leah Hughes is one very talented lady. As well as having done a profile for The Pineapple Post, she has also written a book called ‘The Social Network Cookbook’. Her cookbook was written in Solomon Islands and so all the recipes use ingredients that are either grown locally or can be found easily in the shops around Honiara.

While the first print run has already sold out, Leah has kindly agreed to share one of her favourite recipes with us – Cassava Cake!

 Ingredients (serves 6)

  • 100 grams of fresh or frozen grated cassava
  • 2 eggs
  • 2 teaspoons of vanilla
  • 1 cup of fresh coconut milk
  • 1 can condensed milk
  • ½ cup of evaporated milk
  • 2 tablespoons of butter


  • 2 cups of fresh coconut flesh
  • 1 can of condensed milk
  • ¼ cup of evaporated milk
  • 1 egg


Combine all ingredients in a bowl and mix well. Measure carefully to make sure it is not watery. Transfer mixture into non-stick greased baking dish and bake for 45 minutes in a pre-heated oven. Bake at 160 degrees. When cooked, take it out of the oven and place combined topping mixture on top, then bake for another 15 minutes.
